Chickpeas are a healthy solution in the cuisines of the Mediterranean, provided that olive oil is moderated (sometimes difficult to achieve).

With the use of technology (chic) chickpeas can be found frozen and even completely ready to cook, with artichokes and herbs included in the package. Either way, this is a “pastified” version of this dish.

Cooking time: 45 minutes

 

Ingredients for 4-5 servings:

– 200-250g orzo

– 1 package of frozen chickpeas with artichokes

OR

– 800g frozen chickpeas + 8 artichoke hearts + chopped dill

– 1/2 cup (150-200ml) olive oil

– 2 cups of water

– the juice of 1 lemon

– salt and pepper

Put half of the olive oil in a pan over low heat and soften the onion for about 2-3 minutes.

Add the entire content of the package. If the artichoke hearts aren’t frozen, add them along with the orzo.

In 5-7 minutes, turn the heat up and add salt, pepper, the lemon juice, the rest of the olive oil, the artichoke hearts and 2 cups of water, preferably boiling hot.

When the water has started to boil, add the orzo, lower the heat and close the lid. Cook for about 35 minutes.
