Fusilli salad with spinach and roasted zucchini

Ride your toaster on your way to pasta laziness!

This nutritious salad is unexpectedly simple and tasty and combines two fairly unpopular ingredients into a green surprise

Ingredients for 4 servings:

– 250g whole wheat fusilli

– 100-200g fresh spinach leaves

– 3 zucchini

– 100 gruyere, cut in sticks

– lemon juice

– salt and pepper

The quantity of spinach to use here actually depends on the bowl you’d like to use.

Rinse the spinach leaves well and cut off the roots, if any.

Slice the zucchini, cheese slice-thick or more.

Lay the zucchini slices in the pre-heated toaster after you add a little salt.

In 4-5 minutes check and turn around.

Meanwhile, start boiling the water for the pasta.

When the zucchini seems roasted, add another layer.

When the fusilli is ready, rinse to cool off.

Put the spinach and the pasta in a large bowl.

When all the zucchini has been roasted, add some lemon juice to them.

Then mix everything in the bowl and serve with the cheese and some fresh pepper.
