Penne Sinfonia Rossa

One would normally expect a recipe with a tomato sauce, but these tasty and aromatic red ingredients couldn’t wait to dive in a symphony made of cream and an egg.

Ingredients for 4-5 servings:

– 500g penne

– 10 cherry tomatoes

– 2 red peppers

– 10-15 dried cranberries (optional)

– 250g milk cream

– 1 egg

– 1 red onion, finely chopped

– 50g grated cheese -gruyere, parmesan or similar.

– smoked paprika and salt for the seasoning

 

1.

Finely chop the onion, which is going to add up to the rather sweet taste of this dish.
Put in a pan with hot olive oil over high heat.

Slice the red pepper either in rings or in smaller pieces and add them to the pan.

Cut the cherry tomatoes in quarters -some might prefer them in halves as well.

Throw the cherry tomatoes in and season with some red paprika.

5.

Start boiling the penne in salted water for one minute less than indicated on the package.

When the onion has turned transparent, pour the cream in.

Optionally, you can add the cranberries, which will give a fruity touch to the sauce.

One minute before you drain the pasta, add the egg and quickly whisk until it vanishes into the cream.

Drain the penne. They still need some cooking.

Add them to the sauce, stir and turn the fire off. Leave on the hot plate of the cooker for a while, then serve.

Serve with grated cheese or some freshly ground pepper. Bon appetit!
