Greek salad with olives and lumaconi rigati

Greek salad is originally made with plenty of tomatoes, onion, salt and olive oil. More often than not, feta cheese and olives are added to it, and sometimes green peppers, capers and oregano.

In order to “pastify” the Greek salad, we picked our favourite ingredients, add some lumaconi and made something fresh that can also be eaten as a cold dish in summer.

Ingredients for 3-4 servings:

– 250g lumaconi rigati

– 10-15 cherry tomatoes, cut in two

– 100g feta cheese

– 8-10 green olives

– 10-12 caper buds

– oregano and salt

1.

Boil the lumaconi rigati in a pot with 1 lt of slightly salted water, as indicated.

Cut the tomatoes in two and add them in a bowl.

Here, we used some special oval-shaped variety.

We had some green olives that we could use – although we didn’t add all of them, after all…

Slice and add the feat cheese. We are going to squash it later on, so that there can be some in a every bite.

Drain the lumaconi in a colander and put it under cold water to cool it down a bit.

Add the lumaconi to the bowl, mix everything and sprinkle some salt, oregano and olive oil on top.
