Koula’s Spaghetti-for-All

When I was young, I used to think this is “a typical spaghetti dish”. As I grew up, I found out it was actually a recipe of my mother’s which we all liked, both the meat lovers and the pasta lovers in the family. Later on, I realized it was indeed a version everybody like, especially children, so why not go popular?… 😉

[where 0 is taking a photo and 4 is inventing the flying car]

Ingredients for 4 persons (or 6 children…)

– 500g spaghetti

– 2-3 pepperoni sausages (or any sausage with little fat, like a hot dog, a Frankfurter, etc.)

– 250g slightly concentrated tomato sauce

– 2 laurel leaves

– 2 cinnamon sticks

– 5 cloves

– 5 allspice berries

– salt, pepper, olive oil

 

1.

Start boiling the spaghetti. Boil them one minute less than what the instructions indicate.

Chop the sausages in rather thick pieces – obviously I didn’t get pepperoni for this version of the recipe.

3.

Heat some olive oil in a pan and add all the ingredients except of the cinnamon sticks.

When the sausage fat has melted and the sausages have turned brown, add the tomato sauce.

5.

Let the sauce boil at low heat. When the spaghetti is ready, drain it and throw it into the sauce.

Stir and serve with grated cheese. You’ll be surprised at the slightly oriental, sweet flavour of this sauce. Just remember to “fish out” the laurel, cinnamon and allspice before serving!
