Fusilli salad with mastello and bacon

Ingredients for 4 servings

– 1 lettuce (or a bag with 200g of a lettuce mix)

– 500g wholewheat fusilli

– 250g Greek mastello cheese of Chios (alternatively you can use Cypriot halloumi or Italian mozzarella)

– 200g bacon

– salt, olive oil, balsamic vinegar

 

1.

Finding your lettuce washed and cut in a bag is surely a pretty lazy starting point…

Boil the pasta in salted water following the cooking instructions.

My cheese was in a 500g package, so I cut it in two and saved the rest for another day.

If you’re using a wok or similar pan, you can put the cheese directly into the pan without adding olive oil.

Slice the bacon and put it into the pan just when you turn around the cheese for the first time.

Don’t worry if your cheese turns slightly burnt and crispy. In fact, that’s the way it should be…

Take the cheese out and slice it in pieces.

Add the cheese and the bacon in the salad bowl where you have already put the lettuce.

When the fusilli are ready, rinse them and drain them well.

Add them into the salad bowl and add olive oil and vinegar.
