Ingredients for 4-5 servings:
– 500g spaghetti
– 2 aubergines, sliced and cut in sticks
– 1 red pepper, diced
– 50g parsley
– 2 garlic cloves
– 1 tspn porcini mushroom powder (optional)
– salt and pepper

Before you cut the aubergines in smaller pieces, let them soak in cold water for 20-30 minutes. That makes them release a liquid they contain that sometimes upsets stomachs…

Then cut them in smaller, edible chunks.

Finely chop the garlic cloves.

Bring some salted water to a boil and throw the spaghetti in.

Stir fry the aubergine sticks in some heated olive oil.

Meanwhile, dice the pepper.

Add the pepper and the chopped garlic cloves in the pan.

Optionally, you can add a teaspoon of porcini mushroom powder, which adds up to the taste.

Just a minute before you drain the spaghetti, add the parsley.

Drain the spaghetti, add them in the pan and mix. So simple, yet so tasty!
